Ingredients
  

  • 2 clove Garlic
  • 400 g Peeled Tomato Sauce or passata
  • 3 pieces Red chilly pepper
  • 400 g Pasta
  • 1 bunch Fresh parsley for garnish
  • 2 tbsp Olive Oil extra virgin
  • 30 g Parmesan optional, not traditional
  • 10 g Salt

Method
 

  1. Bring a large pot of salted water to a boil. Cook penne according to package directions until al dente.
    2 tbsp Olive Oil, 2 clove Garlic
  2. Meanwhile, heat olive oil in a large skillet. Add garlic and chili, sauté for 1–2 minutes until fragrant (do not burn garlic).

  3. Add tomatoes, crush with a spoon, season with salt, and simmer uncovered for 10–12 minutes until sauce thickens

  4. Drain pasta (reserve ½ cup cooking water). Toss pasta with sauce, adding a splash of cooking water if needed.
    1 bunch Fresh parsley
  5. Garnish with parsley and serve hot. Sprinkle Parmesan if desired.
