Pasta with Zucchini and Prawns

This Pasta with Zucchini and Prawns is a delicious Italian-inspired dish combining tender pasta, succulent prawns, and fresh zucchini. Quick to prepare and full of flavor, it’s perfect for weeknight dinners, special occasions, or a healthy lunch. The combination of garlic, olive oil, and fresh herbs elevates this dish, making it both light and satisfying.

Ingredients
  

  • 1 medium Onion finely chopped
  • 2 medium Zucchinis sliced into thin ribbons or half-moons
  • 250 g Raw prawns (peeled and deveined)
  • 320 g Pasta (penne or fusilli recommended)
  • 2 tbsp Olive oil extra virgin
  • 3 tbsp Salt and black pepper (add more for the pasta's water)

  1.  Cook pasta in salted boiling water according to package instructions until al dente. Drain and reserve ½ cup pasta water.
  2. Heat olive oil in a large skillet over medium heat. Sauté onion for 1–2 minutes until fragrant.
  3. Add prawns and cook for 2–3 minutes until pink and just cooked through. Remove from pan and set aside.
  4. In the same skillet, sauté zucchini for 3–4 minutes until tender but still slightly crisp.
  5. Deglaze pan with white wine, allowing it to reduce slightly.
  6. Return prawns to the pan and toss with zucchini. Add pasta and a splash of reserved pasta water to create a light sauce.
  7. Season with salt, pepper, parsley, and lemon zest. Buon Appetito!

    Calvarino is a historic Soave Classico wine from a basalt-rich vineyard, aged for 12–15 months on fine lees in glass-lined concrete tanks to enhance richness and complexity. It shows a pale straw yellow color with greenish highlights when young, developing golden hues with age. The nose is fresh and mineral, featuring intense floral notes (acacia, jasmine, elderflower), layered with ripe fruit (almond, pear, peach, pineapple, lemon, cherry) and hints of aromatic herbs (sage, lemon-thyme, mint). On the palate, it is refreshing, elegant, and remarkably long, with refined minerality and finesse.
