Heat 2 tbsp olive oil in a large skillet over medium heat.

Pour in white wine (optional), let it evaporate.
Add zucchini & peppers, drizzle with remaining olive oil, and season with oregano.

Cook for 10β12 minutes, stirring occasionally, until veggies are tender but not mushy.
